‘Sometimes you feel like a nut’, and if you’re custard, the best you can be is a coconut. From long ago and faraway shriveled grapes ‘raisin’ d’etre, well dried in California, son.
Killer quick coconut custard. Vegetarian (not vegan), 100% gluten free and massively healthy. Ok, here you go. This will take you 4 minutes total to get into the oven!
4 eggs
1/4 tsp salt
1/4 tsp Ginger (I used much more!)
2 cups coconut milk (a tin can full is what you need, about 14oz)
1/2 cup honey
2 tsp vanilla extractand a handful or two of shredded coconut if you’d like.
Whisk it all up and bake in a pie pan at 350 for about 30 minutes or till it’s all “set”….(mine took a bit longer)… When it’s cool it’s like a crustless coconut cream pie—— amazing! And soooooo easy!Because you can cook, really you can.
