Just so you know, the story’s fix on the greenhouse gas is that a gasous waste of reference. Eating veggies is healthier, and should be the diet at least 3 days per week or 9 of the 21 weekly meals, almost half.
When using a frying pan …. the Cuisinart stainless is my fav…. heat it up first 4 min. at about half power. Make sure the veggies are chopped …. ready to go. Add the olive oil. If it smokes, turn down heat, and then add the veggies right away (they cool down the oil). Saute’ means ‘bounce’ (I think) and so add the lid and horizontally move the pan, or stir the veggies to get a nice oil over all of them… Oh yeah… just enough oil to cover the pan, and be sure to tilt and move the pan so oil covers the who bottom and a little up the sides. ( no sloshing a bucket full…. it will burn you and you are wasting the oil).
Then turn down the heat, cover and eat soon. Also I like to use a 5.2 liter saute pan… makes as much or more than a wok… and stored in the fridge, it’s great again for lunch on lettuce, or just warmed in the micro …. not too much.
Wash the pan with water only…. getting any sticky stuff off…. a little burned color here and there will not hurt anything…. that’s why you heat up the pan at the beginning… it kills any germs that have resided in the air and dropped down for a feast. (Yeah and the soap only makes you think it’s clean … it also makes everything stick and so on.)
Don’t feel guilty if it’s real easy… cooking can be fun, quick and nutritious….
Oh yeah, and thank you Eva, my only real cooking friend, always cook onions before you do the mushrooms, as the onions need more and the mushrooms add some liquid that mushes up the onions….
